Vegan Chocolate Swirl Banana Bread

So easy and so delicious...and pretty!




Ingredients:

  • 1/2 cup vegetable oil

  • 1/2 cup white sugar

  • 1.5 cups flour

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 3 ripe mashed bananas

  • 1.5 tsp vanilla extract

  • 1/4 cup dark chocolate chips







Directions

  1. Preheat oven to 350F. Grease a loaf pan with butter or non-stick cooking spray.

  2. Mash Bananas.

  3. In a separate bowl, beat together vegetable oil, sugar, and vanilla extract until smooth.

  4. Pour mashed bananas into wet ingredients and combine.

  5. In another bowl, whisk together flour, baking soda and salt.

  6. Gradually add dry ingredients to wet ingredients, stirring until just combined.

  7. In a small bowl, melt chocolate chips.

  8. Add about 1/3 of the batter to the melted chocolate and stir until well incorporated.

  9. Pour half of banana batter into pan. Swirl some of the chocolate batter on top.

  10. Pour remaining banana batter into pan, smooth, then top with remaining chocolate batter, swirling with a knife to distribute.

  11. Bake for approximately 35-40 minutes, or until a toothpick inserted into the center comes out clean.
