Double Fudge Mint Brownies

A festive holiday twist to a classic brownie recipe!

 

Egg free

Nut free

Soy free

(can be made dairy free with substitutions)




Ingredients:


Vegan Brownie Base (Egg free, Dairy free, Soy free)

  1. 1 cup flour

  2. 1 cup white sugar

  3. 6 TBSP cocoa powder

  4. 1/2 tsp salt

  5. 1/2 tsp baking powder

  6. 1 tsp vanilla extract

  7. 1/2 cup water

  8. 1/2 cup oil (coconut, vegetable, or canola)



Mint Layer

  1. 2 cups powdered sugar

  2. 1/2 cup butter

  3. 1 TBSP milk

  4. 1/2 tsp mint extract

  5. 3 drops green food coloring

Chocolate layer

  1. 1 cup chocolate chips

  2. 3 TBSP heavy cream (sub 1:1 with coconut oil to make dairy free/vegan)

  3. 3 TBSP butter

Directions

  1. Preheat oven to 350F. Grease an 8x8 inch brownie pan with butter.

  2. Whisk together dry ingredients: flour, sugar, cocoa powder, salt and baking powder.

  3. In a separate bowl, whisk together wet ingredients: water, vegetable oil, vanilla extract.

  4. Add dry ingredients to wet ingredients and stir until combined. (fold in chocolate chips if desired)

  5. Spread batter into pan and bake for approximately 15-20 minutes or until desired doneness.

  6. Allow brownies to cool in the pan to room temperature, then chill in the refrigerator for at least 20 minutes.

  7. While the brownies are chilling, make the mint filling. In a bowl, beat together powdered sugar, butter, milk, mint extract, and green coloring with an electric mixer.

  8. Spread mint layer over cooled brownies and refrigerate for another 30 minutes.

  9. Add chocolate, butter, and heavy cream in a small saucepan over medium heat. Stir continuously until completely melted.

  10. Remover brownies from fridge. Pour melted chocolate over brownies and spread over mint layer.

  11. Chill until chocolate is hardened. Enjoy!

Optional decorating ideas

  1. Before the chocolate layer hardens, top with crushed candy canes for a peppermint bark topping!

  2. Instead of spreading the chocolate over the mint layer, take a knife or toothpick and gently swirl the melted chocolate topping over the mint for a swirly, marbled appearance! (make sure to do this BEFORE refrigerating the mint layer, so that it is still soft)

  3. If you don't feel like melting the chocolate, just sprinkle chocolate chips over the mint layer! Before refrigerating, gently press the chocolate chips into the mint layer to make sure they stick.
