No-Bake Chocolate Crunch Cookies

These are hands down the easiest cookies you will ever make. While they might not be the prettiest cookies out there, they are absolutely delicious!

All you need to master these is a microwave, a refrigerator, and a few simple ingredients...

 

Egg Free, Peanut Free, Tree Nut Free, Soy Free, Gluten Free. Dairy Free Version Available

 
 

Ingredients

  • 1 1/4 cup cornflakes

  • 1.5 tbsp Sunbutter

  • 6 marshmallows

  • 1/2 cup dark chocolate chips

  • 1 tbsp butter*

  • 1/2 tsp vanilla extract

  • 2 tbsp milk*

*Dairy free version:

  • sub milk 1:1 with dairy free milk alternative

  • sub butter 1:1 with coconut oil

Directions

  1. Line a cookie sheet with tine foil and lightly spray with cooking oil or brush with vegetable oil.

  2. In a microwave safe bowl, melt 1/2 cup chocolate chips. Heat chocolate on 1 minutes intervals at 50% power until melted (2-3 minutes total).

  3. Stir chocolate until smooth. Fold in 6 marshmallows and add 1 tbsp butter. Heat for an additional minute at 50% power, then stir to combine.

  4. Stir in sunbutter, vanilla extract, and milk.

  5. Fold in cornflakes. When mixture is slightly cooled, fold in mini which chocolate chips.

  6. Use a tablespoon to shape cookies into 1-inch rounds and drop on lined cookie sheet. Sprinkle with additional white chocolate chips if desired.

  7. Freeze for 15 minutes, and enjoy! (Store in refrigerator)
