Sunbutter Chocolate Blossom Cookies

A nut free alternative to the classic peanut butter blossom cookie! I adapted the following recipe from an eggless version I found online (https://www.keepinglifesane.com/peanut-butter-kiss-cookies/), and substituted the peanut butter for sunbutter.


These cookies are:

Egg free

Peanut/ Tree-Nut free

Soy free

(can be made dairy free by substituting butter for vegan butter)



Ingredients:

- 1/2 cup softened butter

- 1/2 cup white sugar

- 1/2 cup brown sugar, lightly packed

- 3/4 cup sunbutter

- 1/4 cup applesauce

- 1 tsp. vanilla extract

- 1 1/2 cups flour

- 1/2 tsp. salt

- 1/2 tsp. baking soda

- 1/2 tsp. baking powder

- Dark Chocolate Hershey's Kisses


Directions

  1. Preheat oven to 350F.

  2. Cream butter, both sugars, and sunbutter. Beat in vanilla extract and applesauce.

  3. In another bowl, whisk together dry ingredients (flour, salt, baking soda, baking powder).

  4. Add dry ingredients to butter mixture and combine well.

  5. Roll cookie dough into 1 inch balls. Place on ungreased baking sheet.

  6. Bake for 10-12 minutes. While baking, unwrap the chocolate kisses. Remove cookies from oven, then press one kiss gently into the center of each cookie.

  7. Allow the cookies to cool on the pan for about 5 minutes before moving them to a wire rack to cool completely.
