Nothing says refreshing quite like the bright yet delicate combination of matcha and lemon.

Matcha Green Tea Cupcakes With Zesty Lemon Frosting
Servings: about 18 mini cupcakes
Matcha Cupcake ingredients:
¾ cup flour
½ tsp baking powder
¼ tsp baking soda
Pinch of salt
6 TBSP sugar
3 TBSP melted butter
½ cup milk
1/2 TBSP vinegar
1 tsp vanilla extract
1 tsp matcha green tea powder
Cupcake directions:
Preheat oven to 350F
Whisk flour, baking powder, baking soda, salt with a fork.
In a separate bowl, heat milk and dissolve matcha into it.
Mix milk with butter, sugar, vanilla and vinegar.
Add the dry ingredients and stir until just combined.
Bake the mini cupcakes for approximately 12 minutes
Remove cupcakes from the oven and allow them to cool in the pan for 10 minutes. Remove from pan to cool completely.
Lemon frosting ingredients:
1/2 cup softened butter (1 stick)
1 TBSP milk
Juice of ½ of a lemon
A few drops of yellow food coloring
3 cups of powdered sugar (more or less depending on consistency)
Lemon zest
Frosting directions:
Beat all ingredients until light and fluffy, around 4 mins.
After frosting the cupcakes, top with extra lemon zest.
