Banana bread is probably one of the most under-rated baked goods out there. It is absolutely delicious as a dessert with some ice cream, a snack with some cream cheese, breakfast, or really any way you want. If you're looking for something on the healthier side, look at my ingredient substitutions in the recipe.
Banana Bread
Ingredients:
1 ½ cups flour (you can use white, whole wheat, or gluten free)
1 ½ tsp. Baking soda
¼ tsp. Salt
½ cup melted butter (substitute with vegetable oil to make this recipe vegan)
½ cup white granulated sugar (you can cut back on this if you like)
1 ½ tsp. Vanilla extract
3 medium overripe bananas
Directions:
Preheat the oven to 350F.
Mash the bananas and set aside.
Beat together butter, sugar and vanilla.
In another bowl, combine all dry ingredients (flour, salt, baking soda)
Mix the bananas into the wet ingredients, then slowly add the dry ingredients, mixing until combined.
Pour batter into a greased loaf pan or muffin tin.
Bake in preheated oven for about 45 minutes, or until golden and toothpick inserted into the center comes out clean.
