Cinnamon Rolls
INGREDIENTS
Servings: about 24
Dough
½ cup unsalted butter, melted
2 cups whole milk, warm but not hot
½ cup granulated sugar
1 pack active dry yeast
5 cups flour
1 teaspoon baking powder
2 teaspoons salt
Filling
1/2 cup butter, softened
1/2 cup light brown sugar
2 tablespoons ground cinnamon
Frosting
4 ounces softened cream cheese
2 tablespoons melted butter
2 tablespoons whole milk
1 teaspoon vanilla extract
1 cup powdered sugar
PREPARATION
1. Grease 2 8inch round cake pans with butter or shortening.
2. In a large bowl, whisk together warm milk, melted butter, and granulated sugar.
3. Sprinkle the yeast evenly over the mixture and let it stand for 1 minute.
5. Add 4 cups of the flour to the milk mixture and gently mix.
6. Cover the bowl with a towel set in a warm place to rise for 1 hour.
7. While the dough is proofing, preheat oven to 350˚F.
8. After 1 hour, the size of the dough should have increased. Remove the towel and add an additional ¾ cup of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
9. Knead the dough lightly, adding additional flour until the dough is no longer sticky.
10. Roll the dough out into a large rectangle, about ½-inch thick.
11. Spread the softened butter evenly over the dough, then sprinkle evenly with brown sugar and cinnamon.
13. Roll up the dough, forming a long log.
14. Cut the into pieces that are each about 1½ inches thick. Place each roll side by side until the pans are filled.
15. Cover with plastic wrap and place in a warm place to rise for an additional 30 minutes.
16. Remove plastic wrap. Bake the cinnamon rolls for 25–30 minutes, until golden brown.
17. While the cinnamon rolls are baking, prepare the frosting. In a medium-size mixing bowl, beat together all of the frosting ingredients with an electric mixer until well combined.
18. Remove the cinnamon buns from the oven and drizzle with the frosting.
