Chocolate Covered Strawberries

This easy summertime standby also doubles as eye candy with the help of a little white chocolate drizzle.


The best part? These treats are vegan, gluten free and don’t contain any of the top 8 allergens.

Here’s how to make them:


Ingredients:

  • 1 cup dark or semisweet chocolate chips

  • 1 TBSP coconut oil (or butter, if not dairy free)

  • 1 pint of strawberries

  • 1/2 cup while chocolate chips (optional, but very pretty)


Directions:

  1. Wash the strawberries, making sure to leave the stems intact, and dry well.

  2. Line a cookie sheet or flat tray with wax paper. Lay the strawberries on the wax paper and chill in the freezer for about 10 minutes.

  3. While the strawberries are chilling, combine the dark chocolate chips and coconut oil in a microwave safe bowl. Microwave at 50% power for about a minute. Remove the bowl from the microwave and stir. Return the bowl to the microwave and continue to heat the chocolate at 50% power for 30 second intervals, stirring in between, until the chocolate is completely melted.

  4. Remove the strawberries from the freezer. One strawberry at a time, hold it by the stem and dip it into the melted chocolate until fully coated and gently place on the wax paper.

  5. Once all strawberries have been dipped, place the sheet into the refrigerator for another 10 minutes to allow chocolate to harden.

For white chocolate decoration:

  1. Meanwhile, melt the white chocolate chips using the same method as in step 3, but without the coconut oil.

  2. Once white chocolate is smooth and melted, spoon it into a plastic ziplock bag. Seal, and use scissors to snip a tiny hole from the corner of the bag, a little less than an 8th of an inch.

  3. Remove the strawberries from the fridge, and leaving them on the wax paper, swiftly zigzag the snipped corner of the white chocolate page over the strawberry, squeezing slightly, like you are pipping frosting. Repeat with remaining strawberries.

  4. Allow the chocolate to set (you can do this on the counter if you prefer a softer chocolate coating, or in the fridge if you prefer firmer chocolate coating). Serve and enjoy!

For a different variation, immediately after dipping the strawberry into the chocolate consider sprinkling the strawberries with crushed pretzels or sprinkles!
